Summer Lunch

This is simple, refreshing, and a nice relief from your typical 盖饭 / gai fan Beijing lunch.

Ingredients

1 tablespoon butter (or olive oil)
3 eggs
2 tablespoons milk
Chopped scallions
Vine-ripened cherry tomatoes
Basil (best when from your own potted plant)
Leafy Mustard Greens
Salt and pepper to taste

Directions

Whisk eggs in a cup and add milk for extra fluffiness. Heat pan over stove with butter. Pour egg mixture in and scramble. Serve with fresh basil, scallions, and chopped tomatoes.
