Curried Egg Salad, Special Ingredient Corn Bread

Tired of Chinese food? In need of a taste of home? Below are a couple of recipes that are easy to make well and utilize inexpensive ingredients that are readily available in most Chinese markets.
Curried Egg Salad
I can’t remember ever being a fan of egg salad, but this one somehow hits the spot. The apple’s sweetness is a perfect complement to the paprika’s spicy kick, and the cilantro/dill/parsley add great freshness. Serve with lettuce, lao bing 烙饼, alone, anything goes.
Serves 4
Ingredients
6 eggs
1/3 cup mayonnaise
1 1/2 teaspoons curry powder
1 teaspoon mustard
1/4 teaspoon salt
1/4 teaspoon black pepper
1/8 teaspoon paprika
1 apple (diced)
chopped green onion, cilantro, dill, and parsley (optional) to taste
Directions
1. Place eggs in a pot and cover with cold water. When the water boils, remove the pot from the heat, cover, and keep the eggs in the hot water for 10-12 minutes. Remove from hot water, cool, and peel.
2. In a large bowl, mix together mayonnaise, curry powder, mustard, salt, pepper, and paprika until combined. Add eggs, apple, and onion, etc., and mash well with a fork or wooden spoon.
Secret Ingredient Corn Bread
This one is a real crowd-pleaser. The yogurt ensures a perfectly moist texture. Reduce the amount of sugar a bit if you’re not into a sweet corn bread. These days, it shouldn’t be too hard to find a friend with an oven.

Ingredients
1/2 cup butter
2/3 cup white sugar
2 eggs
1 cup plain, as unsweetened as you can find, yogurt
1/2 teaspoon baking soda
1 cup cornmeal
1 cup white flour
1/2 teaspoon salt
Directions
1. Preheat oven to 375 degrees F (175 degrees C). Grease an 8 inch pan.
2. Melt the butter over the stove, and pour into large bowl.
3. Stir in the sugar, and quickly add the eggs. Whisk until well blended. Add the yogurt and baking soda, and combine. Stir in the cornmeal, flour, and salt until few lumps remain. Pour into the pan.
4. Bake for 30-40 minutes.
