Pangbianr Recipes: Ginger Cookies and No-Knead Bread

SOFT FRESH-GINGER COOKIES

Yields about 2 dozen cookies

Ingredients:

2 ¼ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
¾ teaspoon cinnamon
½ teaspoon cloves or nutmeg
2 tablespoons grated fresh ginger
¾ cup butter, softened
1 cup white sugar
¼ cup honey
1 egg

Directions:

1. Combine flour, baking soda, salt, cinnamon, and cloves.

2. In a large bowl, mix ginger, butter, and sugar. Whisk in honey and egg. Gently fold in the flour mixture. Chill for 1 hour (optional.)

3. Place balls of dough on ungreased baking sheets. Bake at 350 degrees Fahrenheit (175 degrees Celsius) for about 15 minutes or until edges start to brown. Cool and enjoy!

软生姜饼干

材料:

2 1/4 杯白面
1 茶匙小苏打
1/2 茶匙盐
3/4 茶匙肉桂
1/2 茶匙丁香或肉豆蔻
2 汤匙生姜
3/4 杯黄油软化
1 杯糖
1/4 杯蜂蜜

NO-KNEAD COUNTRY RUSTIC BREAD

Although this bread looks like it is quite time-consuming, the actual work time is extremely short. This is the easiest bread recipe I have ever followed, and yields a professional, light, toothsome loaf.

Serves 8

Ingredients:

3 ½ cups all-purpose or bread flour
¼ teaspoon instant yeast
1 ¼ teaspoons salt
1 ¾ cups water
1 handful cornmeal

Directions:

1. In a large bowl, mix 3 cups flour, yeast, and salt. Add the water and stir until a sticky clump forms.

2. Cover bowl with plastic wrap and let rest for 12-18 hours at a warm temperature.

3. Take out onto lightly floured surface, sprinkle more flour on top and whatever other spices you might want (rosemary, olives, nuts, garlic, thyme, seeds.) Fold a few times. Cover for 15 minutes.

4. Using a sprinkle of flour, quickly shape the dough into a ball. Place the dough seam-side down on a cotton towel that is well coated with cornmeal. Sprinkle more cornmeal on top of dough, cover with a cotton shirt, and let rise for about 2 hours.

5. Bake at 475 degrees Fahrenheit (220 degrees Celsius) for 30-45 minutes in a heavy pot with a top (glass or ceramic.) Remove top and bake for 15 more minutes.

无和面的面包

虽然这面包看起来很耗费时间,实际工作时间极短。很简单的做法,并产生一个专业,光,特别好吃的面包。

1 ¼ 杯盐
1 ¾ 杯水
1 把玉米面

做法:

1。在大碗里放入3杯白面,混合酵母和盐。 然后加入水,好好混合搅拌。

2。用塑料保鲜膜包装好,并以室温的温度放置12-18个小时。

3。把一些白面放在桌子上,放生面团在白面上。放白面在生面团上,然后放你想放的佐料(迷迭香、橄榄、坚果、大蒜、白里香和种子等自选其一。)几次,搁放15分钟。

4。让生面团成为一个球面团。放玉米面在上面,用棉布覆盖。休息两个小时。

5。放在475华氏度(220 摄氏度)的烤箱里烤30-45分钟。不用盖再烤15分钟。
